Process
The process begins with the mixing of ingredients. Flour, sugar, fats (like butter or oil), and leavening agents (such as baking powder) are combined in large industrial mixers. Additional ingredients like salt, milk, or flavorings (chocolate, nuts, or spices) are added depending on the recipe. The goal is to create a consistent dough that can be easily shaped and baked.
Once the dough is mixed, it's transferred to a shaping machine. Here, the dough is either extruded through dies to form various shapes or rolled out and cut with molds or cutting machines. This step is crucial as it determines the size and shape of the biscuits. The shaped dough pieces are then placed on conveyor belts that transport them to the oven for baking.
The biscuits are baked in large industrial ovens at controlled temperatures. The baking time and temperature depend on the type of biscuit. After baking, the biscuits are immediately transferred to cooling conveyors to prevent further cooking and to allow them to set into their final texture. Once cooled, they are ready for packaging.
